In this video, I'm making my version of the legendary Double Miso Bacon Burger from Black Bear Burger in London. This award-winning burger has earned a loyal following for its incredibly juicy beef patties, smoky bacon, melted American cheese, sweet onions, and rich miso-infused sauce (Recipe Below)—all served on a soft brioche sesame bun.
After studying this iconic burger, I developed a copycat recipe that captures everything I love about the original while making it easy to recreate in your own backyard or kitchen.

Burger Sauce Recipe:
* Mayonnaise: 1 cup (I used Japanese Kewpie)
* White Miso Paste: 2 tablespoons
* Softened Unsalted Butter: 1 tablespoon (Cooled slightly, to incorporate the "butter" element)
* White Ponzu Paste: 1 teaspoon (Or substitute 1/2 tsp soy sauce + 1/2 tsp lime juice)
* Rice Wine Vinegar: 1 teaspoon
* Toasted Sesame Oil: 1/4 teaspoon (A tiny splash goes a long way)
* Honey: 1/2 teaspoon
Instructions:
1. Soften the Miso: In a medium bowl, vigorously whisk the white miso paste, melted butter, ponzu, rice wine vinegar, honey, and sesame oil together until it forms a completely smooth, thin paste.
2. Emulsify: Add the mayonnaise to the bowl. Switch to a balloon whisk and stir until the dark miso paste is completely integrated, silky, and uniform.
3. Rest: Cover and refrigerate for at least 30 minutes before spreading. This gives the ingredients time to fuse into that deep, savory umami depth.
