Easy Beef & Black Bean Enchiladas — One for Now, One for Later ?✨

  • This is one of those dinners that is always on repeat at our house. I’ve been making these beef and black bean enchiladas since college—they were actually one of the very first dinners I learned how to make!
    And yes… I use flour tortillas. ? I know someone will tell me they aren’t “real” enchiladas, but this is how my family loves them, and they clean their plates every single time.
    The best part? I almost always double the recipe.
    If I’m already browning the beef, making the sauce, and rolling enchiladas, it takes hardly any extra effort to make two pans instead of one. We eat one for dinner, and the second goes into the freezer for another night—or I give it away to someone who could use an easy dinner.
    Same mess. Almost the same amount of work. Two dinners. That’s a win in my book. ?
    ? Easy Beef & Black Bean Enchiladas
    • 1 packet enchilada seasoning
    • 1½ cups water
    • 8 oz tomato sauce
    • 1 lb ground beef
    • 1 onion, diced
    • 2 garlic cloves, minced
    • 1 can black beans, rinsed and drained
    • Flour tortillas
    • 2 cups shredded cheese, or more to taste
    Instructions
    1. Make the enchilada sauce.
    Combine the enchilada seasoning, water, and tomato sauce in a saucepan. Bring to a boil, then reduce the heat and simmer until slightly thickened.
    2. Make the filling.
    Brown the ground beef with the diced onion and minced garlic. Drain any excess grease, then stir in the black beans.
    3. Add the sauce.
    Pour about ⅔ of the enchilada sauce into the beef mixture and stir to combine. Add a handful of shredded cheese and mix it in.
    4. Assemble the enchiladas.
    Spread a little enchilada sauce over the bottom of a greased baking dish. Add about 3 tablespoons of filling to each flour tortilla, roll it up, and place seam-side down in the dish.
    5. Top with sauce and cheese.
    Pour the remaining enchilada sauce over the rolled tortillas and cover with plenty of shredded cheese.
    6. Bake.
    Bake at 350°F for about 15 minutes, or until everything is hot and the cheese is melted and bubbly.
    ❄️ Make Two & Freeze One
    I almost always double this recipe and assemble two pans at the same time. We eat one that night and freeze the second before baking. Then I can thaw it and bake it whenever we need an easy dinner—or pass it along to someone who could use a homemade meal.
    It’s been a family favorite for years, and I have a feeling I’ll still be making this one for years to come. ?
