    Ingredients
    * 1½ cups sabudana
    * Almost 1 cup Water (enough to cover Sabudana)
    * 2 boiled potatoes, mashed
    * 1 cup crushed roasted peanuts(I like more peanuts)
    * Salt to taste
    * 1–2 tsp green chili paste
    * Oil, for deep frying
    Method
    1. Soak the sabudana: Wash the sabudana well and soak it in just enough water to cover it. Leave for 4–6 hours or overnight. The pearls should become soft but not mushy.
    2. Prepare the mixture: Drain the sabudana completely. In a bowl, combine sabudana, mashed boiled potato, crushed roasted peanuts, salt, and green chili paste.
    3. Mix well: Knead everything together until you get a mixture that holds its shape. If it feels too wet, add a little more crushed peanut.
    4. Shape the vadas: Take a small portion and make a ball, then flatten it gently into a thick disc.
    5. Heat the oil: Heat oil on medium flame. To test, drop in a tiny piece of mixture—it should rise steadily, not brown immediately.
    6. Fry: Carefully slide the vadas into the hot oil and fry on medium heat until golden and crisp on both sides.
    7. Serve hot with yogurt or cucumber raita. I don’t like sweet you can serve with sweet yogurt.
    Tip: The key to crispy Sabudana Vada is well-drained sabudana and medium-hot oil. Too much moisture can make the vadas break while frying.
