I barely cooked when I was in India… and then moving to the USA made me realize I actually have to feed myself ??
Somehow I went from barely entering the kitchen to making street-style chicken fried rice at home! ???
This is my easy, spicy, smoky-style chicken fried rice — perfect when you’re craving that Indo-Chinese street food taste at home.
? Street-Style Chicken Fried Rice Recipe
• Chicken – 200g, cut into small pieces
• Cooked basmati rice – 2 cups, preferably chilled
• Eggs – 2
• Onion – 1 small, chopped
• Green chillies – 2
• Garlic – 1 tbsp, chopped
• Carrot + capsicum – ½ cup
• Soy sauce – 1 tbsp
• Pepper – 1 tsp
• Salt – as needed
• Spring onions – for garnish
• Oil – 2 tbsp
Cook the chicken with salt and pepper until nicely browned. In a hot wok/pan, sauté garlic, green chilli and onion. Add the vegetables and stir-fry on high heat. Push everything aside, scramble the eggs, then add the cooked chicken. Add chilled rice, soy sauce, chilli sauce, vinegar and pepper. Toss everything together on high heat until smoky and well combined. Finish with spring onions. ?
