I almost always make too much of the sides on purpose. If I’m boiling pasta, I cook the whole package. If I’m roasting carrots, potatoes or sweet potatoes, I make enough to have some left. Because Thursday comes. And Thursday me does not want to start dinner from scratch. Last night I re-roasted the carrots, potatoes and sweet potatoes (seriously—re-roasting is the BEST way to make them taste freshly made), pulled out some plain pasta, and reheated meatloaf I’d made earlier in the week with tomatoes and onions. Was it meatloaf twice in one week? Yep. We like meatloaf. Why make this harder than it needs to be? Making extra sides when I’m already cooking them is one of the easiest ways I give myself a head start on another dinner.
