What looks like a scorched rock pulled from a fire is actually something completely different—a carefully constructed clay shell hiding an entire chicken.
This is the traditional cooking technique associated with Jiao Hua Ji, commonly known as Beggar's Chicken, in which a wrapped chicken is enclosed in an earthen casing and cooked over intense heat.
The process begins by marinating the chicken with soy sauce, garlic, ginger, and aromatic spices before filling the cavity with additional seasonings and aromatics.
The bird is then wrapped in lotus leaves, which help retain moisture and contribute their own fragrance during cooking. The wrapped chicken is enclosed in a thick mixture of wet clay and plant fiber before being placed into a wood fire.
The clay shell serves as a massive thermal enclosure. As it heats, the earthen casing absorbs and retains heat while shielding the food from direct flames.
Inside the sealed package, heat gradually cooks the chicken while moisture released from the meat, marinade, and aromatics remains largely contained within the wrapping. The result is a slow, enclosed cooking environment that can produce exceptionally tender meat.
Then comes the dramatic reveal.
After the clay casing has hardened from the heat, the shell is cracked open. What initially looked like a burned rock gives way to the lotus-leaf-wrapped chicken inside.
Once opened, the aromatic steam escapes and the cooked meat can be separated from the bones with very little effort.
It's a fascinating example of traditional cooking engineering: earth as thermal mass, plant fibers as reinforcement, natural leaves as wrapping, and a sealed environment as a cooking chamber.
The exact preparation of Beggar's Chicken varies by region, recipe, and historical period, so this video represents a traditional-style interpretation rather than one universal ancient recipe.
