These bright green cubes may look like a modern artificial dessert, but their color and texture come from a remarkably simple combination of fresh leaves, water, and alkaline plant ash.
This traditional preparation, often called Fairy Tofu, uses leaves of Premna microphylla to create a distinctive green plant-based jelly.
The process begins with freshly gathered leaves. After washing, the leaves are crushed vigorously, breaking down the plant tissue and releasing their green, viscous contents.
The mixture is then filtered through fine cloth, separating the liquid plant extract from the tougher fibers.
But the extracted liquid doesn't simply turn into jelly on its own.
The traditional technique uses alkaline water made from plant ash.
Dried branches are burned to produce ash, which is mixed with water and filtered. The resulting alkaline solution is carefully incorporated into the green leaf extract.
This changes the chemical environment of the plant extract and helps its naturally occurring polysaccharides form a cohesive gel structure, trapping water as the mixture sets.
After resting, the once-liquid green extract becomes a firm, sliceable jelly.
The large set block can then be cut into cubes and served in completely different ways.
For a savory version, the cubes can be dressed with chili oil, spices, and aromatics.
For a sweet preparation, they can be combined with fresh fruit and coconut milk.
The fascinating part is that one plant provides the green gel, while another natural material—plant ash—helps trigger the transformation.
It is a beautiful example of traditional food chemistry using materials that would otherwise seem completely unrelated:
? Leaves + ? Water + ? Ash → ? Jelly
The exact preparation varies by region and plant material, and wild plants should never be consumed without reliable identification and appropriate preparation.
