Ingredients • 3 bananas • 150 g desiccated coconut • 150 g blueberries • 3 gelatin sheets • 2 tablespoons boiling water Instructions Mash the bananas. Add the desiccated coconut and mix well. Spoon the mixture into a cupcake tray, shaping it so the center is slightly hollow and the edges are higher. Bake in a preheated oven at 180°C for 10–15 minutes. Meanwhile, blend the blueberries until smooth. Place the gelatin sheets in cold water for 5 minutes until they soften. Then add 2 tablespoons of boiling water to a bowl, add the softened gelatin sheets, and stir quickly until they dissolve. Add the blended blueberries and mix well. When the cupcakes come out of the oven, pour the blueberry mixture into the centers.
