Key Lime Cake from Cake Mix Cake Ingredients • 1 box vanilla / white cake mix (15.25 oz) • ½ c Greek yogurt (full fat), room temperature • Zest of 1 lime (2 if more tart desired) • 2/3 c key lime juice • 1/3 c milk, room temperature • ¼ c melted butter • ¼ c vegetable oil • 4 eggs, room temperature • ¼ c powdered sugar Key Lime Glaze Ingredients: • 2 tbsp key lime juice • 1 c powdered sugar Instructions: 1. In a bowl combine all cake ingredients, mix until smooth. Cover bowl with plastic wrap and sit for 15-45 minutes to hydrate batter. While hydrating, preheat oven to 350, grease a 10 cup bundt pan. 2. Pour batter into prepared cake pan. Bake for 40 - 45 minutes or until toothpick inserted into the center comes out mostly clean. Let cake cool in pan for 15 minutes, then remove and place on wire rack. Cover with plastic wrap to finish cooling. 3. While cake cools, make glaze: combine powdered sugar and lime juice until smooth. 4. Pour glaze on top of cooled cake (top with lime zest if desired), transfer to serving plate, and enjoy.
