Maple Meringue Donuts
Ingredients:
Donuts:
¼ cup milk, warmed to 105-110 F
1 ¼ tsp instant yeast
¼ cup + 1 tsp granulated sugar
1 cup bread flour (I used gluten-free)
Pinch of salt
2 egg yolks
1 tbsp unsalted butter, melted
1 tsp vanilla extract
Granulated sugar, for coating
½ cup jam, for filling
Oil, for frying
Powdered sugar, for dusting
Maple Meringue:
2 egg whites
¼ tsp cream of tartar
Pinch of salt
½ cup maple syrup
Directions:
For the Donuts: In a bowl, warm the milk to at most 110 F, then add in the yeast and 1 tsp sugar
Mix and set aside until foamy, around 10 minutes
In a large bowl, mix the flour, rest of the sugar (¼ cup), salt, egg yolks, butter, and vanilla extract
Add in the foamy yeast mixture, then mix with a spatula or stand mixer until a soft dough forms
Place the dough in a lightly oiled bowl and cover with a damp towel and let rise for 1-2 hours in a warm place until almost doubled
Once proofed, roll until around 1-inch flat, then use a ½ cup measure to cut circles
Roll the scraps into a ball and repeat, then heat 3-4 inches of oil to 350 F
Fry the donuts on both sides until golden brown, around 2-4 minutes total, then place on a paper towel to absorb excess oil
For the Maple Meringue: In a bowl, whisk the egg whites, cream of tartar, and salt with an electric mixer until medium peaks form
In a pan on medium heat, bring the maple syrup to a boil and let simmer for 1 minute
Pour the maple syrup slowly into the egg whites, mixing nonstop, then mix until stiff peaks form
Once the donuts have cooled, make holes in the centers and pipe the meringue in
Dust with powdered sugar and serve
