Ingredients
2 sesame seed buns
2 onion patties, sautéed
2 tomato slices
2 slices of cheddar cheese
2 slices of jack cheese (I used habanero)
1 lb. ground beef, I used wagyu
1 jalapeño, sliced
2 slices of bacon, cut in half
Big Mac Sauce
Shredded lettuce
Pickle slices
Worcestershire sauce
Burger/beef seasoning
Big Mac Sauce Ingredients
1/4 cup mayo
1/8 cup ketchup
1 tbsp. mustard (I used mustard relish)
1 tbsp. pickle juice
1 tbsp. pepper relish
1 pickle, finely diced
Salt Pepper Garlic seasoning
Onion flakes
Instructions
Make the big mac sauce and set it aside. I made mine a few days prior for smash tacos and then saved the rest in the fridge for these burgers.
Sauté the onion patties in a cast iron skillet. While the patties are sautéing, cook the bacon slices on a griddle. Once done, remove them and wipe the excess grease.
Form four equal size balls, then use a meat smasher to smash the patties on the griddle. Drizzle a little Worcestershire sauce on the patties, then season with burger/beef seasoning.
Cook for 2-3 minutes per side (or less depending on how thin you smashed your patties), then flip and season.
Once done, add the jalapeño slices to two of the patties, then top all four patties with cheese. I made two jack cheese patties and two cheddar cheese patties (one for each burger).
Toast the buns, then assemble the sandwiches. Spread the big mac sauce on the inside of both buns.
Layer the lettuce, pickles, onion, patties, bacon, and tomato on the bottom bun. Set the top bun on top.
