Reuben Pizza at the Ooni Booth Pizza Expo 2026 Ooni Volt 2

  • A peek at the Reuben pizza demo I gave at the @OoniHQ booth during Pizza Expo 2026!
    My buddy Jimmy Hank went with a NY vs. Philly sandwiches theme and I baked this spin on a deli classic in the Volt 2 while he made his Philly cheesesteak pizza in the Koda 2 Pro.
    I’ve done a few different versions of this pizza over the years, including a bar pie that finishes with the sauce. The main takeaway here is using your existing marinara or tomato sauce and using it to make what I call a Russian marinara (rather than a Russian dressing that uses ketchup). For this demo, I used the sauce as the base. You can find an example recipe I posted in March 2024 on the nextlevelpizza website (www.nextlevel.pizza)
    Canned corned beef is an easy approach to this one (I use the reduced sodium version), but you could use your favorite pastrami as well. I like baking this with sauerkraut to get the acids and juices to blend with the meat. I like to add swiss cheese to the top of the pie prior to baking. I finish with Dijon mustard, caraway seeds, and celery salt. Serve with gherkins or your favorite pickle on top for that extra bit of color, crunch, and flavor contrast.
    Thinking I’ll add one more step to this one in the future that incorporates pickle and sauerkraut juices to a finishing oil for an extra pop.
