I worked at Chick-fil-A for wayyy too long and today I'm showing you how to make their waffle fries at home! You will need one important tool, an extra large waffle fry cutter! A standard waffle fry attachement that you would find with a mandolin will not work as the ridges are too shallow, which will produce thin waffle fries, not thick waffle fries like Chick-fil-A.

5 large russet potatoes
4 cups boiling water
48 ounces canola oil
Kosher salt, to taste

1) Scrub the potatoes thoroughly under hot water until the skins are very clean.
2) Begin heating your oil to 325°F while you prepare the potatoes.
3) Using the large waffle fry cutter, place a potato into the slicer and make your first cut. Then rotate the potato 90 degrees (a quarter turn) and slice again. Continue slicing, rotating the potato 90 degrees between each cut. This alternating pattern is what creates the waffle shape. Transfer the cut potatoes to a large bowl as you go.
4) Once all the potatoes are cut, pour boiling water over them and let them soak for 20 minutes. This helps remove excess starch and gives you a better final texture. The potatoes must be completely covered with the boiling water to prevent them from turning brown.
5) Drain the potatoes and dry them thoroughly. Fry in batches at 325°F for 5 minutes. This is your first fry, which cooks the inside without browning too much.
6) Remove the potatoes and place them on a wire rack or paper towels to drain.
7) Increase the oil temperature to 350°F.
8) Return the potatoes to the oil in batches and fry for 5–7 minutes, or until golden brown and crispy. Remove and drain, then immediately season with salt.
