Hello everyone! „Bohneneintopf mit Geselchtem“ is a traditional bean soup with smoked or cured meat (Geselchtes/Selchfleisch). This dish is very popular in Austria, especially in the eastern regions (like Burgenland), as well as in the Balkans and Central Europe, because it's hearty, filling, and warming. Beans (usually white beans) are combined with vegetables such as carrots, celery, and potatoes. I use canned white beans here to save time. You can also use dried white beans, but these need to be soaked for a few days beforehand until they soften up a bit before cooking. Ingredients: 800–1000 g white beans (canned) 1 kg Geselchtes (Austrian smoked pork) 3 large carrots 4–5 potatoes 1 leek 1 large onion 1 bunch of parsley 2–3 sprigs of thyme 1 tbsp vegetable, chicken, or mushroom stock 4–5 tbsp cooking oil zest of one lemon salt and pepper grated horseradish (optional) #culinary #europeancuisine #austriancuisine #balkancuisine #cooking #food #europeanfood #austrianfood #soup #whitebean #whitebeansoup #smokedmeat #beanstew #curedmeat #potatoes #carrots #leeks #springonions #onions #culinary #cured #balkanfood
