? Ingredients
For the Stuffing:
* 3–4 medium potatoes, boiled, peeled & mashed
* 2 tbsp oil
* ½ tsp cumin seeds
* A pinch of hing (asafoetida)
* 1 tbsp ginger-garlic-green chili paste
* 1 tsp red chili powder (adjust to taste)
* ¼ tsp turmeric powder
* ½ tsp garam masala
* Salt to taste
* 2 tbsp chopped cilantro
* 1 tsp lime juice
For the Ghughra:
* Empanada dough sheets (or homemade ghughra dough)
* Oil for deep frying
For Serving:
* Tamarind chutney
* Garlic chutney
* Green chutney
* Sev
* Finely chopped onions
* Pomegranate seeds
* Chopped cilantro (optional)

1️⃣ Make the Stuffing
* Heat oil in a pan and add cumin seeds and hing.
* Add the ginger-garlic-green chili paste and sauté for a minute.
* Stir in the red chili powder, turmeric, and garam masala.
* Add the mashed potatoes and mix until well combined.
* Season with salt, then finish with cilantro and lime juice. Let the mixture cool.
2️⃣ Assemble
* Cut the empanada dough into smaller circles if needed.
* Place a spoonful of filling in the center.
* Fold over and seal by pleating the edges or pressing with a fork.
3️⃣ Fry
* Heat oil over low to medium heat.
* Fry the ghughras until they're evenly golden brown and crispy.
* Remove and drain on paper towels.
4️⃣ Serve
* Top with tamarind, garlic, and green chutneys.
* Finish with sev, onions, cilantro, and pomegranate for the ultimate street-style chaat experience.
