Stir-fried Cumin Pork Belly with Dried Tofu— College Eats Day 2

    Welcome back to College Eats Day 2! Let’s make stir-fried pork belly with dried tofu + king oyster mushrooms.

    Pork belly Ingredients:
    - 1 lb pork belly, thinly sliced
    - 1 king oyster mushroom, sliced
    - 2 pieces of dried tofu (firm pressed tofu), sliced
    - 2 cloves garlic, smashed
    - 2 slices of ginger, sliced
    - 2 Serrano peppers, sliced (optional, adjust to your level)
    - 1 tbsp neutral oil (less if you have very fatty pork belly)
    - 1 tsp cumin powder
    - 1 tsp spicy BBQ seasoning
    - 1 tbsp soy sauce
    - 2 tsp oyster sauce
    White rice (side pot) ingredients:
    - 1 cup of rinsed white rice
    - 1 cup of water
    Rice Steps:
    1. Cook rice in white rice mode on the side pot
    2. Fluff up the white rice after the cycle is over and let it steam for 10 minutes before serving
    Pork Belly steps:
    1. Heat your Instant Pot on saute mode and add 1 tbsp of oil
    2. Add the pork belly and cook for about 3 minutes until the fat renders and the edges begin to brown.
    3. Add the ginger and garlic, then cook for 30 seconds, until fragrant.
    4. Add the king oyster mushrooms and oyster sauce, then stir-fry for 2 minutes, until softened and lightly browned.
    5. Add the sliced dried tofu and serrano, then cook for another 2 minutes.
    6. Stir in the cumin powder and spicy BBQ seasoning. Toss everything together until evenly coated.
    7. Serve immediately over steamed rice or enjoy on its own.
