    ? Cherry cake
    Dry ingredients:
    250g (2 cups) white spelt flour
    15g (1 tbsp) baking powder
    Liquid ingredients:
    200g (¾ cup + 2 tsp) soy milk
    150g (¾ cup) light cane sugar
    80g (½ cup) sweet cherries
    80g (5 ½ tbsp) deodorized coconut oil
    50g (3 tbsp) tart cherries or juice
    2g (⅓ tsp) salt
    1 vanilla pod
    Blend all the liquid ingredients in a blender together until super smooth! Then sift in the flour + baking powder. Whisk the batter until it's combined and bake at 180C (365F) until it's golden and a toothpick inserted into the middle of the cake comes out clean. Usually takes me about 30min but ovens are different:)
    Raspberry frosting:
    300g (1 ¼ cups) silken tofu
    170g (¾ cup) deodorized coconut oil, melted
    180g (1 ¼ cups) raspberries
    100g (½ cup) light cane sugar
    Pinch of salt
    100g (6 tbsp) Irish moss gel (Chondrus crispus), room temperature
    For the frosting just blend all the ingredient together in a high speed blender until super smooth and emulsified!
    ? Whipped quinoa and buckwheat porridge (for 2 portions).
    200g (½ cup) green unroasted buckwheat
    320ml (1⅓ cups) water for cooking the grains.
    Ingredient for blending:
    500g (2 cups) soy milk
    + 50g coconut cream (optional)
    1 banana
    3-5 deglet nour dates (less if using Medjool)
    30g (about 3 tbsp) nice-tasting protein powder (I use St. Helia ‘Vegan Protein Powder Plus’, a mix of pea and oat protein)
    Pinch of salt
    1–2 tsp mushroom powders like turkey tail
    ½ tsp cinnamon
    Rinse and soak the grains overnight (optional). Cook with about 320ml water for about 20 minutes until cooked. Blend with the rest of ingredients at high speed for about a minute.
