A Slow Turkish Cooking Day at Home | Homemade Döner, Simit & Baklava From Scratch

  • A slow summer day spent exploring Turkish cuisine, preparing homemade comfort food, and enjoying peaceful kitchen moments in my cozy little kitchen.
    In this relaxing cooking vlog, I spend a beautiful day making traditional Turkish-inspired dishes from scratch and enjoying the simple joy of homemade food.
    I start my morning by preparing fresh homemade Simit, the famous Turkish sesame bread with its golden crispy crust and soft, fluffy texture. I share the process of making the dough, shaping the simit, adding sesame seeds, and baking this delicious Turkish classic at home.
    Simit Recipe:
    Ingredients:
    Flour 250 g
    Cold water + cold milk 150 g
    Yeast 4 g
    Salt 5g
    Sugar 6g
    Olive oil 25 g
    Molasses about half a cup
    Sesame seeds
    *Combine the dry ingredients, then add the wet ingredients and knead until the dough is smooth and uniform. Let it rest at room temperature for 1 hour.
    Divide the dough into 4 or 6 equal pieces. Roll each piece out, shape it into a short log, and let it rest for 5 minutes. Then roll each log into a long rope. Rest for another 5 minutes, then shape the ropes into simit rings as shown.
    Dip each simit first into the water-and-molasses mixture, then coat it with sesame seeds. Let them proof for another 45 minutes.
    Meanwhile, preheat the oven to 220°C using both top and bottom heat. After the final proof, spray the simits with water and place them in the oven. Reduce the temperature to 200°C and pour boiling water into a tray on the lower rack. Bake for 10 minutes with steam, then remove the water tray and bake for another 5 minutes without steam.*
    Later, I continue my Turkish cooking journey by making homemade Döner from scratch, inspired by the flavors of Turkish street food. From preparing the seasoned meat and creating the layers to cooking and assembling the final dish, this recipe brings the feeling of a Turkish street food experience into my little kitchen.
    For the sweet ending, I prepare traditional Turkish Baklava, a delicate dessert made with layers of pastry, nuts, and sweet syrup. The slow process of making each layer reminds me that cooking is not only about food, but also about patience, creativity, and enjoying the moment.
    This video is not just about recipes, but about slowing down, discovering different cultures through food, and finding happiness in the small moments created inside a warm kitchen.
