INGREDIENTS
? PLUMS
500 g (1.1 lb) ripe Zwetschgen / plums
STREUSEL
120 g (½ cup) melted butter
40 g (3 tbsp) sugar
200 g (1⅔ cups) all-purpose flour
1 packet vanilla sugar (Vanillezucker)
OR 1 tsp vanilla extract
CAKE BATTER
200 g (¾ cup + 2 tbsp) softened butter
80 g (⅓ cup) sugar
400 g (3¼ cups) all-purpose flour
2 medium eggs
10 ml (2 tsp) vanilla extract
10 g (2 tsp) baking powder
150 ml (⅔ cup) milk
OPTIONAL
½ tsp cinnamon, sprinkled over the streusel
BAKING
Bake in a preheated conventional oven at 180°C (350°F), top & bottom heat, for 40–45 minutes.
HOW TO MAKE IT
1. Prepare the plums
Wash and dry 500 g of Zwetschgen. Cut them in half and remove the stones. If they are very juicy, let them drain for a few minutes.
2. Make the streusel
Mix the melted butter and sugar. Add the flour and vanilla sugar, or vanilla extract. Mix with your hands until coarse crumbs form.
Chill the streusel while preparing the cake batter.
3. Make the cake batter
Beat the softened butter and sugar until creamy. Add the eggs one at a time, then add the vanilla extract.
Mix the flour and baking powder separately.
Add the flour mixture and milk alternately in 3–4 additions. Mix gently after each addition and stop as soon as the batter comes together.
4. Prepare the baking tray
Spread the batter evenly into a parchment-lined 29 × 33 cm (11.4 × 13 in) baking tray.
5. Add the plums
Arrange the halved Zwetschgen over the batter, cut side up. Don’t press them too deeply into the batter.
6. Add the streusel
Scatter the chilled streusel generously over the plums.
If you like, sprinkle a little cinnamon over the streusel.
7. Bake
Bake at 180°C (350°F), top & bottom heat, for 40–45 minutes, until golden brown and baked through.
8. Cool and serve
Let the cake cool before slicing. Enjoy this buttery, juicy and crispy German classic with a cup of coffee or tea! ☕?
