Mija, come here. A bag of chips, a pound of ground beef, and a block of cheese are already a Friday dinner. Cheesy, beefy nachos, piled on one big platter in the middle of the table, about thirty minutes, and the whole family fed on a budget. And at the end, the true story of the man who invented nachos in a Mexican border town, and why they carry his name.
⭐ CHEESY BEEFY NACHOS (a big platter, feeds 6)
    For the beef:
    • 2 lb ground beef
    • 1/2 white onion and 1 Roma tomato, chopped
    • 2 cloves garlic
    • 1 tsp cumin, 1 tsp chile powder, 1/2 tsp dried Mexican oregano, salt
    • 1/4 cup water
    For the cheese sauce:
    • 3 tbsp butter, 3 tbsp flour, a pinch of salt
    • 1 can (12 oz) evaporated milk
    • 1/2 cup milk
    • 8 oz cheddar or Monterey Jack from a BLOCK, grated yourself
    • A few pickled jalapeños, chopped, plus a spoon of the jar juice
    For the platter:
    • Thick tortilla chips, or day-old corn tortillas cut in 6 and fried
    • Shredded lettuce, pico de gallo, crema or sour cream, sliced pickled jalapeños
    ⭐ THE METHOD
    1. CHIPS: fry tortilla triangles until deep gold and fully stiff. A chip held at the corner should not bend (the crisp law, book page 178). Salt while hot. Bag chips are honest, buy the THICK ones.
    2. BEEF: dry, hot pan. Break it up, then leave it alone so it BROWNS. Keep going past the watery gray stage until it fries again (page 152).
    3. Push it aside. Onion and tomato in the fat, 3 minutes, garlic 1 more. Spices and salt. 1/4 cup water, simmer until thick and clinging, not dripping.
    4. CHEESE SAUCE: melt the butter, whisk in the flour and salt, 2 minutes. Pour in the evaporated milk SLOWLY, whisking. Add the milk, whisk until it thickens just before it bubbles.
    5. Heat LOW. Cheese in two handfuls, the first fully melted before the second. Jalapeños and a spoon of their juice. Taste for salt.
    6. BUILD IN TWO LAYERS: half the chips, half the sauce, half the beef. Then the rest of the chips, sauce, beef. No naked chips.
    7. Cold on top: lettuce, pico de gallo (3 parts tomato to 1 part onion, chile, cilantro, lime, salt, page 124), crema, jalapeños.
    8. To the table NOW. Minute one is perfect. Minute ten is memory.
WHY A BLOCK OF CHEESE: bagged shredded cheese is coated in a fine powder so it does not stick in the bag, and that powder makes it melt grainy. Grate your own and it melts smooth. The flour keeps the sauce silky instead of oily.
THE HONEST WORDS (because I will not oversell you):
    • Lumpy sauce → the milk went in too fast. Pour slowly, keep whisking.
    • Grainy sauce → bagged cheese, or the heat was too high.
    • Soggy chips → thin chips, wet meat, or it sat too long.
    • Too thick later → whisk in a splash of warm milk.
    • Nachos are not in my book. They are a border dish. Every step here comes from a law that is.
WHO PROFITS: the whole platter is about $25 at my store and feeds six. A restaurant plate of loaded nachos is $15 or $16, and a family needs three or four. The jar of orange cheese sauce is mostly water, oil, and powders. Yours has five real things.
THE HABIT: make the beef on Thursday. On Friday you only fry the chips and melt the cheese. Leftover beef = Saturday tacos with an egg on top.
And the cheese sauce baked onto the pot? That is the other half of my life: ? Clean The Mexican Way → [link to cleaning channel]
Make this platter this Friday. If you only change two things: grate the cheese from a block, and build the platter in two layers. Then tell me in the comments who reached first, what your family puts on top, and your county.
