The Best Buffalo Chicken Pizza I've Ever Had

Welcome to another edition of Slices I Never Thought I’d Love: the Square Buffalo Chicken Pizza from Stretch in Williamsburg, Brooklyn.
It starts with a par-baked shell, which gives you an incredibly light crust. On top: a light layer of whole milk mozzarella and two layers of onion flavor, cooked red onion (one of my favorite
toppings) and thin cut scallions added after the bake.
The chicken is confit chicken thighs, extra soft and succulent. The buffalo sauce is just Frank’s Red Hot and melted butter. it’s more of an undercurrent than the main flavor.
Instead of goopy blue cheese dressing dumped on top, you get it on the side. And that’s what makes the slice.
For years people have asked me where to find the best buffalo chicken pizza. This is one of the best.
