Feeding the whole family at the drive-thru adds up fast. This is the chicken sandwich I make instead. ?
Ingredients
2 boneless skinless chicken breasts
1 cup dill pickle juice
1 large egg
1 cup milk
1 cup all-purpose flour
1 Tbsp confectioners’ sugar
1 tsp paprika
1 tsp pepper
1 tsp salt
Peanut or canola oil, for frying
4 hamburger buns
16 dill pickle slices, for serving
Instructions
Cut the chicken breasts into 4 fillets and trim off any extra fat.
Put the chicken in a bowl with the pickle juice. Cover it and refrigerate for 30 to 60 minutes, or overnight.
Drain and throw out the pickle juice.
Whisk the egg and milk together, then pour it over the chicken.
Add the flour, powdered sugar, paprika, pepper, and salt to a large zip-top bag and shake to mix.
Drain the extra milk mixture off the chicken, add the chicken to the bag, seal it, and shake until coated.
Heat the oil in a large pan over medium heat, or use a deep fryer.
Fry the chicken in batches for about 3 to 5 minutes, until golden brown and crispy.
Let it drain on a paper towel-lined plate.
Put the chicken on the buns, top with pickles, and serve right away.
