Honey Sriracha Crispy Chicken Sandwich ??️?
Ingredients
For the Chicken
2 chicken breasts, halved into 4 thin cutlets
1 cup buttermilk
2 tbsp pickle juice
1 tbsp sriracha
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp paprika
For the Coating
1½ cups all-purpose flour
½ cup cornstarch
1 tsp salt
1 tsp paprika
1 tsp garlic powder
For the Honey Sriracha Sauce
2 tbsp butter
⅓ cup honey
2–3 tbsp sriracha
¼ tsp cayenne pepper
For the Spicy Mayo
½ cup mayo
1 tbsp sriracha
½ tsp garlic powder
¼ tsp cayenne pepper
¼ tsp black pepper
For Assembly
Brioche buns
Pickle slices
2 tbsp butter, melted
1 tbsp chopped fresh parsley
Instructions
Marinate the chicken in buttermilk, pickle juice, sriracha, salt, black pepper, garlic powder, and paprika for at least 30 minutes or overnight.
In a shallow bowl, combine the flour, cornstarch, salt, paprika, and garlic powder. Dredge the chicken thoroughly, pressing the flour mixture onto the chicken to create a crispy coating.
Heat oil to 350°F (175°C) and fry the chicken until golden brown, crispy, and fully cooked through. Transfer to a wire rack.
To make the honey sriracha sauce, add the butter, honey, sriracha, and cayenne pepper to a small saucepan over low heat. Mix until melted, smooth, and well combined.
To make the spicy mayo, combine the mayo, sriracha, garlic powder, cayenne pepper, and black pepper in a small bowl and mix until smooth.
Toss or brush the crispy chicken with the honey sriracha sauce until evenly coated.
Toast the brioche buns. Spread the spicy mayo on the bottom bun. Add the honey sriracha chicken and top with pickle slices. Spread more spicy mayo on the top bun and close the sandwich.
Mix the melted butter and parsley together, then brush it over the top of the sandwich bun.
Serve immediately and enjoy.
