Trying Chapli kebab sandwich Nihari pizza Butter chicken grilled cheese

    This is Subko and the menu takes some of the subcontinent's most iconic dishes and reimagines them in ways you've probably never seen before.
    A chapli kebabwich (73 AED) with wagyu and Angus kebab stuffed into house-made sourdough bread. A New York-style nihari pizza slice (22 AED) topped with pulled lamb, nihari gravy and mint chimichurri. A butter chicken grilled cheese (60 AED) which was RIDICULOUSLY GOOD. Every dish feels familiar and completely new at the same time. As good as the savoury dishes were, my favourite innovation was the kulfi-stuffed cruffin (39 AED).
    The sourdough is baked in-house. The sauces are made in-house. They make their own chocolate and even have a tasting station where you can try it for yourself. Much of their produce comes from their own farms, giving them complete control over the ingredients they use.
    Even the building has a story. Those red bricks covering the walls were shipped all the way from India because they wanted the space to feel authentic to the roots that inspired it. The more we spoke to the team, the more hidden details we discovered.
