I made these cucumber cream cheese tea sandwiches for my daughter’s birthday party, and honestly, they looked so cute on the table. Light, creamy, fresh, and easy for kids to pick.
Ingredients:
16 slices soft white/whole wheat bread, crust removed
1 English cucumber
8 oz / 226 g cream cheese, softened
¼ cup mayonnaise
1 tbsp minced fresh dill
1 tbsp minced fresh chives, optional
1 tbsp lemon juice
¼ tsp garlic powder
¼ tsp salt
Black pepper, to taste
Cherry tomatoes for topping, optional
How to make:
Peel the cucumber in stripes, then slice it very thin.Place cucumber slices on paper towel, sprinkle a little salt, and let them rest for 15 to 20 minutes to release extra moisture. Pat dry well.
In a bowl, mix softened cream cheese, mayo, dill, chives, lemon juice, garlic powder, salt, and black pepper. Adjust seasoning to taste.
Spread the cream cheese filling on bread, layer the cucumber slices, add a little black pepper, and close with another bread slice.
Cut into small triangles or squares. I used crustless white and whole wheat bread, so no trimming was needed.
Add a cherry tomato on top with a small pick to make them party-table ready.
Tip: Don’t skip drying the cucumber. That keeps the sandwiches fresh and prevents sogginess.
Herb substitute:
If dill and chives are not easily available, use finely chopped coriander leaves + spring onion greens. Keep it mild so the cream cheese flavor still stays fresh.
