Just toss everything into a container and give it a good shake! In just a few minutes, you’ll have a crisp, refreshing, and flavorful cucumber salad that’s perfect as a side dish, snack, or served with rice.
Ingredients
* 3 mini cucumbers
* 1/2 tsp salt
* 1 tsp vinegar
* 1/2 tsp soy sauce
* 1 tsp sesame oil
* 1 tbsp sugar
* 1 clove garlic, minced
* 1/2 tsp chili powder (adjust to taste)
* 1 tsp red chili, sliced
* 1 tsp sesame seeds
* 1–2 scallions, chopped
Directions
1. Slice the mini cucumbers into thin rounds.
2. Add the cucumbers, salt, vinegar, soy sauce, sesame oil, sugar, garlic, chili powder, red chili, sesame seeds, and scallions to a container with a lid.
3. Seal the container and give it a good shake until everything is well combined and the cucumbers are evenly coated.
4. Serve immediately, or chill for 10–15 minutes for even more flavor.
Enjoy on its own, with rice, or alongside your favorite meal!
