Chef's Special #1 - Lamb Burger
Not every burger needs cheddar cheese and ketchup.
This gourmet lamb burger combines juicy spiced lamb, tangy pickled onions, fresh herb paste, and a refreshing cucumber-lime sauce.
Ingredients (Serves 2)
For the Lamb Patties
• 300g lamb mince (high fat preferred)
• ½ tsp black pepper
• Salt, to taste
• ½ tsp garlic powder
• ½ tsp cayenne pepper
• ¼ tsp dried oregano
• 1 tsp allspice
For the Pickled Onions
• 1 small onion, finely julienned
• 100ml water
• Whole peppercorns
• 1 small cinnamon stick
For the Herb Paste
• Fresh basil
• Fresh mint
• Fresh coriander
• 4–5 whole almonds
• Extra virgin olive oil
For the Sauce
• Homemade mayonnaise
• Fresh lime juice
• 1 seedless cucumber, finely chopped
• Salt & black pepper
Additional Components
• 2 burger buns
• Boiled spinach (optional)
Method
1. Prepare the Patties
• Mix lamb mince with all seasonings
• Divide into 2 thick patties
• Shape evenly
2. Pickle the Onions
• Boil water, peppercorns, and cinnamon
• Add onions and remove from heat
• Leave to lightly pickle
3. Make the Herb Paste
• Blend basil, mint, coriander, almonds, and olive oil
• Pulse until coarse and chunky
4. Make the Sauce
• Mix mayonnaise, lime juice, and cucumber
• Season to taste
• Chill until needed
5. Cook the Patties
• Cook over medium-high heat until medium-well
• Develop a deep caramelized crust
• Rest for 10 minutes
6. Toast the Buns
• Toast until golden and crisp
Assembly
• Spread cucumber-lime sauce on bottom bun
• Add pickled onions
• Place lamb patty on top
• Add herb paste
• Add boiled spinach (optional)
• Finish with top bun
