How To Make Coconut Cream Pie

  • My husband requests this coconut cream pie every year for his birthday! It's that good. More often than not, I'll find him standing in front of the refrigerator with a spoon, taking bites straight from the center and finishing off a whole pie within a day!
    This recipe is inspired by the Tender Coconut Cream Pie from my cookbook, Desi Bakes, but I simplified it into an easy, no-bake version. Coconut water adds a fresh, delicate flavor reminiscent of the sweet, tender coconuts sold by street vendors throughout India. Recipe by @milkandcardamom below:
    Ingredients:
    one 9 inch pre-made graham cracker crust
    Coconut filling
    1 ⅓ cup full fat coconut milk
    ⅓ cup coconut water
    ⅓ cup granulated sugar
    4 Tbsp cornstarch
    1 tsp vanilla extract
    ¼ tsp freshly ground cardamom
    ⅛ tsp kosher salt
    Whipped Cream
    1 cup heavy cream
    ½ cup powdered sugar
    1 tsp vanilla extract
    Topping
    ⅓ cup unsweetened shredded coconut, toasted
    Directions:
    1. To make the filling, add coconut milk, coconut water, sugar, cornstarch, vanilla, cardamom and salt into a saucepan and whisk until smooth. Cook over high heat, stirring continuously, for 6-8 minutes, or until the mixture thickens. Once thick, cook for another 2 minutes, continuously whisking. Pour the custard onto a large plate and cover with plastic wrap. Freeze the custard for 30 minutes or until cool.
    2. In the bowl of a stand mixer with the whisk attachment, add heavy cream, powdered sugar, and vanilla extract, then whisk on high speed until stiff peaks form, about 4-5 minutes.
    3. Spoon the cooled coconut custard into a mixing bowl and whisk until smooth and loose. Add ½ cup of whipped cream and whisk to loosen the mixture. Add in 1 cup of whipped cream and gently fold until well combined. Pour the custard mixture into the pie crust and spread into an even layer. Top with the remaining whipped cream and smooth into an even layer.
    4.Top with toasted coconut and refrigerate for at least 2 hours before serving.
