CRISPY PORK TRIFECTA ??
Pork spare ribs on the bottom. Pork belly in the middle. Crispy pork crackling on top.
That's why I call it the Pork Trifecta.
Method:
✅ Jaccard the skin (prick tiny holes. You can use the tip of a sharp pointy knife)
✅ Season the meat side generously
✅ 250°F (120°C) on the Traeger for 2.5 hours
✅ Place the pork in a foil boat, leaving the skin fully exposed
✅ Cover the skin with heaps of salt
✅ Back on at 250°F (120°C) for another 3 hours, or until probe tender
✅ Remove the salt, brush with oil and lightly season the skin
✅ Grill setting in the oven at 250°C for 10 minutes until the crackling puffs up
The result? Fall-off-the-bone pork ribs, beautifully rendered pork belly and crispy bubbles of nothing.
